Ingredients
- 2 cans of full-fat Thai coconut milk
- 1/4 cup + 2 tablespoons of manuka honey
- 2 tablespoons of bee pollen
- 1/2 teaspoon xanthan gum or 1 tablespoon cornstarch
- A pinch of coarse salt
- 1 tablespoon vanilla extract (optional)
Instructions
Step 1
Blend the coconut milk, 1/4 cup of manuka honey, 1 tablespoon of pollen, xanthan gum, salt, and vanilla (if using) until smooth. Refrigerate the mixture for several hours or overnight.
Step 2
Pour the mixture into an ice cream maker and follow the manufacturer's instructions. Once the ice cream has set, pour 1/3 of the mixture into a chilled container, smooth the surface, then add a drizzle of the remaining honey and some of the bee pollen. Repeat until all the ingredients are used up.
Step 3
Place in the freezer for at least 4 hours or overnight. Remove the ice cream 10 to 15 minutes before serving.
